Roasted Mackerel with Mustard Vinaigrette (serves 4) Fish:
- 3 tsp garlic powder
- 3 Tbsp paprika or chili powder
- 1 tsp salt
- Vegetable oil or olive oil
- 4 whole mackerel
Preheat the oven to 400°F. Mix salt, garlic powder, and paprika together in a small bowl. Add a few drops of oil to make a paste. Coat the inside and outside of the mackerels with the paste. Put mackerel in a baking tray or casserole dish and drizzle with oil. Bake for 20 minutes (flip the fish after 10 minutes). Serve fish with dressing. Suggested sides are rice, mashed potatoes, or pasta and steamed vegetables or a salad.
- 2 Tbsp vinegar
- 2 tsp mustard (yellow, brown, Dijon, etc.
- ½ cup vegetable oil or olive oil
- Salt and pepper to taste
While the fish are baking, mix all of the dressing ingredients together in a small bowl to make dressing.
