VOICES FROM THE WHEELHOUSE
Voices from the Wheelhouse is a monthly half-hour radio show on WOMR 92.1 FM and WFMR 91.3 FM, where we join fishing boat captains for one-on-one conversations about their life and times on the water. Hosted by our own Seth Rolbein, we learn how local fishermen contribute much more than great fresh seafood in our markets and restaurants. They develop sustainable practices, work to protect our oceans, and provide Cape Cod seafood to hungry families in need. Tune in to their stories, their voices, their lives, and you'll feel connected to an historic past and a healthy future.
As part of the program, each month we share a recipe featuring the seafood the fishermen interviewed bring to shore. Click below for delicious dishes featuring local fishes!
Funding for this program is provided in part by grants from Cultural Councils in the towns of Bourne, Brewster, Chatham, Harwich, Orleans, Sandwich, Truro and Wellfleet, and by the Dennis Arts and Cultural Council and the Mid-Cape Cultural Council, local agencies supported by the Massachusetts Cultural Council, a state agency.
We are partnering with Buy Fresh Buy Local Cape Cod to bring you a series of short, fun cooking videos featuring local seafood from Cape Cod fishermen.
Cape Cod has a rich bounty of delicious seafood, caught and harvested by our local fleet of small-boat fishermen. We encourage you to try a new way of enjoying an old favorite, or to be adventurous with some of the “underloved” species that are abundant in our waters.
Bluefish today is handled pristinely by fishermen who bleed it on board and ice it immediately. This isn’t your father’s bluefish! Surprise and impress your dinner guests with this recipe.

Triple Citrus Grilled Cape Cod Bluefish (click to download the PDF)
1 cup orange juice
1/4 cup fresh lime juice (2-4 large limes)
1/4 cup fresh lemon juice (1 large lemon)
1/4 cup olive oil
1 tablespoon dry white wine (or white wine vinegar)
salt and ground black pepper to taste
1/4 cup lemon pepper seasoning
2 bluefish fillets, skinned and cut into 4-6 even portions (approx. 3-4 pounds)
Grilled Citrus Garnish Ingredients:
Additional lemons, limes and oranges
¾ cup sugar
Pour orange juice, lime juice, lemon juice, olive oil and white wine into a large glass bowl. Add salt, pepper and lemon pepper seasoning. Stir to blend. Leave the squeezed lemon and lime halves in the bowl, too.
Submerge the fish fillets into the bowl of marinade. Cover and marinate in the refrigerator for at least two hours.
Preheat grill or grill pan for high heat. When the grill is hot, oil the grate well with canola oil.
Cut the garnish oranges, limes and lemons in half crosswise. Pour sugar in a bowl. Dip the cut side of each fruit in the sugar to lightly coat. Grill the sugared fruit over medium-high heat until caramelized with char marks.
When ready to grill the bluefish, get grill hot and oil the grate again well with canola oil. Alternatively, you can use an oiled grilling fish basket. Place fish fillets on the grill. Baste with marinade during first half of cooking and discard remaining marinade. Cook for approximately four minutes on each side, or until fish flakes with a fork.
Transfer to a serving platter and garnish with grilled citrus fruit.
Serve & enjoy. DELICIOUSLY LOCAL!
